Looking for an easy recipe, which is healthy and yet quick to prepare? Then definitely try this vegetarian tortellini with pesto and mushrooms. It's on the table in about 20 minutes and contains lots of vegetables. For me, an ideal dish after a long day at work. In the pantry I have a large storage box of tortellini (dried, not fresh). You can vary with whatever leftover vegetables you have; tortellini actually tastes good with anything!

Ingredients

  • 200 grams of mushrooms
  • 1 zucchini
  • 1 onion
  • 3 tablespoons pesto (this is how you make pesto yourself)
  • 200 grams of tortellini
  • 50 grams grated cheese
  • 2 handfuls arugula

Vegetarian tortellini with pesto and mushrooms

    How do you make vegetarian tortellini with pesto and mushrooms?

    1. Put water on the stove for the tortellini.
    2. Dice the zucchini and clean the mushrooms. Chop the onion.
    3. Once the water is boiling, add the tortellini to the pan. Kook About 15 minutes, until the tortellini is cooked. Meanwhile, proceed with the vegetables.
    4. Heat some oil in the pan and sauté the onion. Add the zucchini and mushrooms. Fry these for about 10 minutes.
    5. Drain the tortellini and mix this into the vegetables. Add the pesto and mix well.
    6. Serve with arugula and garnish with grated cheese. Enjoy your meal!

A vegetarian recipe is always good! I hear more and more often in my area that people eat less meat and that makes me very curious about how you think about it. Do you eat less meat? If so, why? Or if not, why not?

As mentioned, you can use all kinds of vegetables. In the fall it is delicious with boiled pumpkin and mushrooms. Or go for a combination of Dutch and Italian; Tortellini with endive! Or alternate with tomato sauce instead of pesto. So many variations :-)!
