Well, Wednesday's veggie sausage rolls have barely cooled, when I'm already bombarding you with vegetarian quesedillas again. What is it, all this vegetarian stuff? Well, with all the ever finer meat substitutes available, I don't find meat so necessary anymore. We know better and better how bad meat is for our planet. It takes an enormous amount of water to 'produce' meat. For me personally, it feels less and less good to eat meat. That's why more and more vegetarian alternatives are being put on the table, which I am of course happy to share with you.

Vegetarian quesedillas with avocado

These vegetarian quesedillas with avocado are delicious and easy to prepare. Fry the vegetable chicken pieces until golden brown, then mix the corn, bell bell pepper, red onion, and spread the mashed avocado, red pepper and lemon juice over the wraps. Fill the wraps with the vegetables, chicken pieces and grated cheese and bake or grill the quesedillas until crispy. Perfect for a quick, healthy meal or lunch!

Ingredients

  • 150 grams of cooked corn
  • 1 bell bell pepper
  • half a red onion
  • 175 grams of vegetable chicken pieces
  • 2 avocados
  • 1 lemon
  • small piece of red pepper
  • 4 piadinas (or gluten-free wraps)
  • 75 grams of grated cheese
  • salt and pepper

How to make vegetarian quesedillas with avocado?

    1. Heat some oil in the pan and fry the vegetable chicken pieces nicely golden brown.
    2. Cut the bell pepper into cubes and also do this with the red onion. Mash the avocados, finely chop a small piece of red pepper. Do this at the avocado, together with the juice of half a lemon.
    3. Then mix the corn with onion and bell pepper.
    4. Spread a whole piadina with avocado. Now divide the vegetables over it and then the vegetarian chicken pieces. Garnish with grated cheese and then add the second piadina.
    5. You can bake or grill the piadina in the pan; I used my contact grill. Super handy, then you don't have to turn the whole. Cut the crispy piadina into two halves and enjoy your meal!
