After all the eating and baking during quarantine time, a healthy sweet snack is more than welcome! I have for you a delicious recipe for vegan sweet potato brownies. This is a healthy version of the original chocolate brownies, but they are at least as delicious and creamy! Mind you, it's hard to stay away from them so usually they are finished in no time ;-).

Vegan sweet potato brownies

Vegan sweet potato brownies are a healthy and creamy treat, perfect for anyone who loves chocolate. The batter is made from pureed sweet potato, cocoa powder, peanut butter, maple syrup, and nuts, and baked until the brownies are soft and creamy. Adding almond shavings and fresh fruit provides an extra crunchy and fresh topping. Ideal as a snack or served warm with a scoop of vegan ice cream.

Ingredients

  • 1 sweet potato about 250 grams
  • 50 grams of cocoa powder
  • 8 tablespoons coconut oil or olive oil
  • 125 grams of peanut butter
  • 1 teaspoon vanilla extract
  • 50 grams of flour of your choice
  • 150 ml maple syrup or put pitted dates in water for 10 minutes if still too dry
  • 1 pinch of sea salt
  • 1 teaspoon baking powder
  • 1 pinch of cinnamon
  • 75 grams of chopped nuts of your choice
  • handful of almond meal for garnish
  • handful of red summer fruit for garnish

How to make vegan brownies with sweet potato?

    1. Preheat the oven to 175 degrees. Place the sweet potato in one baking dish And bake 1 hour at 175 degrees. Then let cool well in the fridge.
    2. Chop the nuts of your choice into large pieces. Heat the 8 tablespoons of coconut oil in the microwave for 30 seconds.
    3. When the sweet potato has cooled well, peel the potato and mash it with a fork in a mixing bowl. Add the maple syrup, coconut oil, vanilla extract and peanut butter to the sweet potato. Mix it well with a spatula and then add the cocoa powder, baking powder, cinnamon and salt. Mix everything well and finally add the flour together with the chopped nuts.
    4. Take a small square baking dish or baking tin and cover it with baking paper. Press the baking paper well and pour the sweet potato brownie mixture into the baking tin. Smooth with a spatula.
    5. Place the baking tin in the oven for 30-35 minutes at 175 degrees. The last 10 minutes you can sprinkle almond shavings on it so that the sweet potato brownie gets a nice crispy layer.
    6. Remove the sweet potato brownie from the oven and let cool. The brownie should be a bit creamy, even after cooling. Cut it in 8 equal pieces and top with some fresh fruit or serve it for dessert with a scoop of ice cream. The tastiest is to eat it warm, so that it is even smoother. Hmm tasty!
