When you are not feeling so fit, a heavy meal is not a good idea. A soup is always nice then: it's easily digestible, nice and warm and you can pack it full of vitamins. Zucchini and mint is a lovely fresh combination together! When you're not feeling fit, you often don't feel like standing in the kitchen for a long time, but you can hardly even think of making this soup as cooking. Chopping is not necessary because the soup is pureed, and the hand blender and pan actually do all the work for you. So just spend 15 minutes in the kitchen, and then this deliciously fresh and healthy soup is ready.

Zucchini soup with mint

Ingredients

  • 1.5 zucchini
  • 2 cloves of garlic
  • 1 shallot
  • Vegetable broth
  • 1 liter of water
  • Handful of fresh mint
  • Provencal herbs to taste
  • Juice of 1/4 lemon
  • Olive oil for frying
  • Salt & pepper

Zucchini soup with mint

    1. Coarsely cut the garlic and the shallot and make cubes of the zucchini. Heat some oil in the pan, fry the onion in it and add the garlic a little later. Now also add the zucchini and bake for about 5 minutes.
    2. Kook In the meantime a liter of water in the kettle. Put the boiled water in the pan, crumble the stock cube above it and season with some Provencal herbs, pepper and salt. Let it boil for about 10 minutes over medium heat.
    3. Now add the coarse fresh mint and lemon juice and puree the soup with the hand blender until a smooth whole is created. Taste the soup and taste it as you like. A little too much lemon put in? A little honey works wonders. Enjoy your meal!

Serve a baguette or roasted sandwich!
