This cauliflower soup with apple is deliciously creamy and full of flavor. The apple adds a fresh, sweet touch, while leeks and curry add depth. Perfect as a light main course or a warming lunch!

Ingredients

  • 1 cauliflower
  • 4 stalks of leeks
  • 2 onions
  • 2 cloves of garlic
  • 1 apple
  • 2 vegetable stock cubes
  • 1 dash of olive oil
  • 1 tablespoon curry
  • handful of fresh parsley
  • pepper and salt to taste
  • 1200 ml water

Cauliflower soup with apple

    1. Cut the onion and garlic into large pieces and heat some oil in a large soup pot. Fry the onion and garlic for 3 minutes and add 1 tablespoon of curry.
    2. Then peel the apple, remove the core and cut into small segments. Then cut the cauliflower into large florets and the leek into large pieces.
    3. Add the sliced ​​apple, cauliflower and leek to the onion and garlic. When the vegetables are somewhat baked, then add 1200 ml of water with 2 vegetable stock cubes. Gently bring it to the kook And let it simmer for 15 minutes on low heat. 
    4. Remove the pan from the heat. Finely chop a handful of fresh parsley and sprinkle it in the soup. Then mix with a hand blender until the soup becomes cream-like. Add some pepper, salt and/or nutmeg if necessary and serve in deep soup bowls. Serve the cauliflower soup with a nice piece of bread, and the feast can begin!
