Another hour of cooking is just not something you look forward to. And you probably also want to do other things in the evening, such as working out or visiting friends. This vegan poké bowl with quinoa, mango, avocado and cucumber is a godsend. Not only is it quick to prepare, it's also heart healthy.

Ingredients

  • 75 grams of quinoa
  • 75 grams of mango
  • A generous handful of roasted chickpeas
  • A piece of cucumber
  • half an avocado
  • handful of lettuce
  • handful of sunflower seeds
  • soy sauce

Vegan poké bowl with quinoa, mango and avocado

    How do you make a vegan poké bowl with quinoa, mango and avocado?

    Roast the chickpeas in the oven: about 30 minutes at 200 degrees. Add some paprika seasoning and a bit of cumin powder if necessary.

    Kook Meanwhile, cook the quinoa.

    Cut the mango and cucumber into cubes. Cut the avocado into slices.

    Put the quinoa in a bowl and add the remaining ingredients. Divide this into "compartments," so the mango on 1 side, the chickpeas, cucumber, avocado and lettuce on the other sides. Garnish with sunflower seeds and a dash of soy sauce.
