What I miss most, now that we've been without a kitchen for almost 4 weeks? My oven! Oh and the faucet, because taking your cups to the bathroom to wash up every time is not so convenient. But I really miss an oven a lot. I also can't wait until we have a combi steam oven soon, that's totally cool! Before the kitchen went out, I baked this delicious vegan cinnamon cake with apple at the last minute.

  • 150 grams of unsalted cashews
  • 3 dates
  • 150 ml vegetable milk
  • 1 banana
  • 100 grams spelt flour or gluten-free flour
  • 1 tsp tartar baking powder
  • 2 teaspoons cinnamon
  • optional: 1 apple

Vegan cinnamon cake with apple

    How to make vegan cinnamon cake with apple?

    1. Preheat the oven to 170 degrees.
    2. Peel the dates and put them with the cashews and milk in the food processor or food processor. Grind finely. Then add the banana and flour, baking powder, salt and cinnamon. Mix until an even mixture forms.
    3. Grease the springform pan with a little (coconut) oil. Pour the batter into the mouldand bake for about 30-35 minutes.
    4. Garnish with some apple pieces and a little agave syrup, if desired. Enjoy!

I made this cinnamon cake with spelled flour. For a gluten -free variant you replace the spelled flour with almond flour or buckwheat flour. It is a pretty "heavy" cake, not very airy (if you want an airy cake, you have to try this gluten and sugar-free cake from grandma), but very tasty!

I saw this recipe with another series of vegan recipes. And it seemed too good to me not to try. You can keep the cake covered in the fridge for a few days. I also thought it was very nice to taste, although the cake is a bit firm in structure.
