Recipes Gluten free Baking Sugar Free

Christmas is barely over and the New Year is just around the corner. Many people make a conscious decision in the new year to pay better attention to their diet or to exercise more. A good intention? No, a different lifestyle! One that is easy to maintain, partly because with a little creativity you can still enjoy the tastiest things. Today I am 'treating' myself to Apple muffins without sugar and gluten.

Recipe

Ingredients

  • 100 grams of almond flour
  • 30 grams of coconut flour
  • 100 grams medjoul dates (pitted)
  • 250 grams diced Jonagold apples (approx. 1-2 apples)
  • 2 eggs
  • 1 ripe banana
  • 2 teaspoons vanilla extract
  • 2 teaspoons cinnamon
  • 1 teaspoon tartaric acid baking powder
  • 1/2 teaspoon baking soda
  • pinch of salt

Apple muffins

    1. Preheat the oven to 175 degrees
    2. Peel the apples and cut the apples into very small cubes.
    3. Put the peat Medjoul dates and the banana together in the food processor and grind to a fiddle.
    4. Put the almond flour, coconut flour, cinnamon, baking powder, baking soda and salt in a mixing bowl. Do the banana spray, the 2 eggs and the vanilla extract. Turn on the food processor.
    5. Add the apple cubes after about 1 minute and let it mix for a few minutes.
    6. Prepare about 10-12 muffin shapes in a (muffin) baking tin. Turn off the food processor and fill the muffin shapes with the batter until this is used up.
    7. Put in the oven and bake nicely golden brown in about 20 minutes.
