As you know by now, I eat less and less meat. Sometimes we eat vegetarian all week here at home, without really realizing it. Eating less meat is so easy. There are now lots of meat substitutes available, but you can also easily make a quick vegan burger yourself. With this recipe you throw everything in the food processor and in 15 minutes your vegan burgers are on the table.

  • Frying pan
  • Cutting board
  • Kitchen knife

Ingredients

  • 400 grams of cooked chickpeas
  • 200 grams of black beans
  • 2 tablespoons (gluten free) flour
  • half teaspoon paprika
  • half teaspoon cumin powder
  • juice of 1 lemon
  • handful of lettuce
  • 1 large tomato
  • half bell pepper
  • 4 gherkins
  • Turkish bread (or 4 gluten-free rolls)
  • salt and pepper
  • olive oil
  • optional: (beet) hummus

Vegan burger

    Blend the beans and chickpeas in the food processor. Add the paprika, cumin powder, lemon juice, salt and pepper and the flour. Does the dough still remain too wet to make burgers? Add some extra flour.

    Heat oil in the pan and fry the burgers in it. About 6 minutes per side, on low-medium heat.

    Meanwhile, slice the tomatoes and cut the pickles and bell bell pepper into strips.

    Cut the Turkish bread into pieces and optionally spread with beet hummus. Top with some lettuce.

    Place the burger on top, top with some tomato slices, pickle and bell bell pepper. 

    And enjoy your veggie burger with turkish bread.

My parents still eat plenty of meat. My mother unfortunately does not really believe in vegetarian food, but my sister and I secretly try to get it a bit. So when my mother came to eat last with us, I made these vegan burgers. Just to convince her that it is really possible without meat! She found them very tasty and I am sure these burgers will also be appreciated by you!
