You really can't find a pizza without wheat. The past month I have searched everywhere for products that I am allowed to eat. Some things you just can't find. A pizza, for example. A while ago I made my own falafels from chickpea flour, which were quite tasty. And so then I got an idea: why not make a pizza crust out of chickpea flour? Right. So into the kitchen. A bit of trial and error, but I ended up with a tasty result: a Paleo Pizza.

Ingredients

  • 125 grams of chickpea flour
  • 350 ml water
  • salt and pepper
  • 2 tablespoons of olive oil[/ingredients]
  • For the pizza sauce:
  • 1 can of peeled tomatoes (400gr - no added sugars)
  • 1 onion
  • 2 cloves of garlic
  • handful of fresh basil
  • For the pizza dough:
  • half a zucchini
  • half an eggplant
  • mushrooms
  • arugula
  • dried oregano
  • olives
  • pine nuts

Paleo pizza

    1. Preheat the oven to 225 degrees.
    2. Put the flour, water, salt and pepper in a bowl and beat until a smooth mixture with a whisk. Then stir in 2 tablespoons of olive oil. Pour this into a porridge and bring to the kook. Keep stirring constantly, otherwise you will get lumps.
    3. If it has become a thick porridge, pour the porridge into a baking tin or baking tin with baking paper.
    4. Bake the dough in the oven for 15-20 minutes, until it turns light brown.
    5. Coarsely cut the onion and garlic into pieces and put together with the peeled tomatoes and basil in the food processor. Let the food processor run for 1-2 minutes until you have a smooth sauce.
    6. Your pizza bottom is now ready (if it's right). Remove it from the oven and then pour your pizza sauce over it. Smooth. Then cover your pizza with all kinds of fresh vegetables. I chose aubergine, zucchini and mushrooms in slices and a few more fresh olives.
    7. Put the pizza in the oven for another 10-12 minutes (225 degrees). Remove your pizza from the oven and garnish with some fresh arugula and oregano. Ready to attack?

Just adjust your expectations in advance: you don't get a crispy pizza breast. It is more a savory pizza cake, because the bottom remains soft. But I am more than Happy with it to just occasionally do whether I also eat pizza. Oh yes, and experiment especially with your pizza bare. I don't eat dairy, but I think Parmesan cheese tastes great too!
