Parsnip soup

with bacon and mushroom

Ingredients

  • 500 g parsnips
  • 2 (large) onions
  • 2 cloves of garlic
  • 1`el. curry powder
  • 1/2 chili pepper
  • 1 chicken bouillon tablet
  • 1 potato
  • 250 g bacon strips
  • 125 g mushrooms
  • possibly a dash of olive oil

Parsnip soup

    1. Cut the onions into cubes and squeeze the garlic. Put a little butter/oil in a soup pan and fry the onion and garlic. 
    2. Peel and cut the potato and parsnips into pieces and also add. Cut chili pepper into small pieces, remove seeds and also add them to the soup pan. Then add a tablespoon of curry powder and leave the pan on the fire for 5 minutes.
    3. Finally, add 1 chicken broth tablet and 1.2 liters of water. Let the soup boil and simmer for 30 minutes on the fire.
    4. In the meantime, fry the bacon strips in a frying pan and make it nice and crispy.
    5. Cut the mushrooms into slices and fry for another minute in the frying pan.
    6. When the 30 minutes are over you can mix the soup with a hand blender until smooth. Just before serving, add the bacon, mushrooms (and possibly olive oil) and you're done!
