Once in a while I spend a whole day in the kitchen thinking up and making all kinds of goodies. Since it had been a while since I made a real dessert (not a cake or anything like that), I decided to do something fun with it. I think coffee and desserts go super well together and this delicious sugar-free dessert with ricotta and coffee gives you a little taste of Italy. Not too heavy, pure flavors and the ricotta makes it a low-carb recipe.

Sugar-free dessert with ricotta and coffee is an airy Italian dessert perfect for coffee lovers. The dessert consists of layers of whipped ricotta with espresso, cinnamon and vanilla, combined with a coffee jelly made from lungo and agar agar. After 20 minutes of stiffening in the refrigerator, it is finished with cocoa powder or shaved chocolate for a sophisticated, sugar-free finish to the meal

Ingredients

  • 2 egg whites
  • 1 lungo coffee (120ml)
  • 2 teaspoons stevia or use honey
  • 250g ricotta cheese
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla extract
  • half bag of agar agar 3-4 grams
  • 1 sachet instant espresso

How to make a sugar-free dessert with ricotta and coffee?

    1. Set a cup of coffee (lungo) of approximately 120ml. Stir in the agar agar, divide over two beautiful glasses and put in the fridge so that it can set. This takes about 20 minutes.
    2. Then put the ricotta, together with the instant espresso, cinnamon, vanilla extract and stevia in a food processor and mix well. You can of course also do this by hand.
    3. Beat the proteins in a clean bowl until beautiful peaks arise and you can keep the bowl upside down. Then carefully scoop the proteins through the ricotta mixture, so that it gets nicely airy.
    4. Divide the ricotta mixture over the two glasses with coffee. Finish with some cocoa powder or planed chocolate. Enjoy!
