You will never change my mind: breakfast is my favorite meal! Especially when you half asleep just open one eye and remember that it is Sunday and you have all the time to start your day with something delicious that is also healthy! This stack of pancakes with figs, honey and pecans; it makes me happy! Plus, they are lactose and gluten free and contain only natural sugars.

Pile of pancakes

This is an easy and quick to prepare recipe, because (almost) everything pretty much goes into the blender at once. Within 10 minutes, you'll be at the table!

Ingredients

  • 175 grams of gluten-free oatmeal
  • 200 ml soy or almond milk
  • 1 banana
  • 1 1/2 teaspoon cinnamon
  • 1 teaspoon honey
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 1/2 teaspoons (gluten-free) baking powder
  • 1 egg
  • 2 figs
  • 20 grams of pecans (roasted for 5 minutes at 180 degrees)
  • Coconut oil (or butter) for frying

Pile of pancakes

    1. Add all the ingredients (except the egg, coconut oil, figs and nuts) in a bowl and mix with a blender or hand blender Until an even dough is created.
    2. Add the egg and mix it for about ten seconds until the egg is completely absorbed.
    3. Heat one frying pan With one to two tablespoons of coconut oil. When the pan is hot, pour the batter into small circles in the pan and fry for 2-3 minutes per side until golden brown.
    4. Cut the fig and place it together with the pecans on the pile of pancakes. Finally, a big tablespoon of honey to finish it.
    5. Enjoy!
