Last weekend, these spelt cookies with goji berries rolled out of the oven at my place. They are deliciously crunchy cookies, completely vegan because no egg is added and they are also free of refined sugars. These cookies were tasted by a strict testing audience and they thought they were delicious!

Spelt cookies with goji berries

Deliciously crunchy cookies and a good alternative to the unhealthy sugar bombs you buy at the store.

Ingredients

  • 130 grams of spelt flour
  • 45 grams of rice flour
  • 50 grams of coconut blossom sugar
  • 50 grams of goji berries
  • 1/2 teaspoon baking soda
  • 1 teaspoon baking powder
  • 50 grams of coconut oil
  • 2 teaspoons vanilla extract
  • 3 tablespoons water

Spelt cookies with goji berries

    1. Preheat the oven to 185 degrees
    2. Mix the dry ingredients (spelled flour, rice flour, coconut blossom sugar, goji berries, baking soda, baking powder) in a large bowl.

    4. Meanwhile, melt the coconut oil.
    5. Then mix the coconut oil and vanilla extract and water through the dry ingredients. Knead quickly into a smooth dough; Add some extra water if the dough stays too dry.
    6. Stick or make the cookies from it and place them on a baking sheet covered with baking paper.
    7. Bake them nicely golden brown in about 13-16 minutes. Let them cool outside the oven; They then become even crisper.
