Surely one of my favorite dishes to make AND eat is pasta. I really see it as a comfort food; when I prepare a nice pasta for myself after a hard or long day, it really cheers me up! I saw this spaghetti with spinach recipe in a magazine the other day and couldn't wait to put my own spin on it! The creamy spinach and zucchini sauce is delicious, and makes this dish an original alternative to the classic bolognese sauce.

Spaghetti with spinach and zucchini sauce

Spaghetti with spinach and zucchini sauce is a creamy and flavorful Italian dish, perfect for a quick meal. The sauce is made from stir-fried zucchini, spinach and onion, pureed with broth and cooking cream, and flavored with Italian herbs. Add vegetarian minced meat and cherry tomatoes for extra bite, and serve the sauce over spaghetti with grated cheese for a delicious and versatile dinner.

Ingredients

  • 1 dash of olive oil
  • 1 zucchini
  • 1 onion
  • 400 grams of spaghetti
  • 200 grams of fresh washed spinach
  • 300 grams of minced meat or vegetarian mince
  • 1 vegetable stock cube
  • 1 container cherry tomatoes
  • 250 ml of water
  • 100 ml of cooking cream
  • 100 g grated cheese to taste
  • Italian herbs to taste
  • salt and pepper to taste

How to make spaghetti with spinach and zucchini sauce.

    1. Chop the onion and cut the zucchini into small cubes. Stir -fry this together for about 5 minutes in a large frying pan or wokpan. Then add the fresh spinach little by little, and fry until it has shrunk. Add 250 ml of water and the vegetable broth cube and stir well. Let this cook for about 10 minutes on low heat.
    2. Kook In the meantime, the spaghetti (or pasta of your choice) according to the instructions on the package.
    3. Bake in a separate one frying pan The (vegetarian) minced meat loose.
    4. After 10 minutes, turn off the heat pan or wok, and puree the vegetables with a hand blender To a creamy sauce.
    5. Put the pan with sauce back on the heat and add the cooking cream. Stir this well. Add Italian herbs, salt and pepper to taste. Then stir the minced meat.
    6. Finally, cut the cherry tomatoes into halves or quarters and slowly scoop it through the sauce.
    7. Spoon the spaghetti on plates or deep bowls. Serve the spinach and zucchini sauce over it and finish it with grated cheese to taste. Enjoy your meal!
