Chef Robert Verweij taught us all about blisspoint; the perfect blend of flavors like salty, sour, sweet and spicy. Not only do you want these flavors reflected in your appetizers, but also in your drinks! That's why we also tasted two cocktails, specially designed to accompany two types of cheese. And to go with the cheese and the cocktails, chef Robert made two special appetizers. This inspired me to start making my own snack at home with Kaltbach Le Gruyère AOP: salad boats with dates, walnuts and gruyere.

Lettuce boats with dates, walnuts and gruyere

Put something different on the table with drinks! These lettuce boats are packed with flavor and are nice and light.

Ingredients

  • 2 dates
  • 30 grams of walnuts
  • 75 grams Emmi KALTBACH Le Gruyère AOP
  • 1 head of baby romaine lettuce
  • balsamic

Lettuce boats with dates, walnuts and gruyere

    Finely chop the walnuts. Peel the dates and cut them into small cubes. Do the same with the gruyere. Then mix the walnuts with dates and gruyere.

    Wash the lettuce and cut off the end. You will need about 6 leaves of romaine lettuce.

    Fill the lettuce boats with dates, walnuts and gruyere. Finish with a drizzle of balsamic. Enjoy!

    For the Old Fashioned cocktail with dates:

    45 ml Bols Corenwyn

    15 ml Bols date liqueur

    15 ml cane sugar syrup (or replace with pureed date)

    3 dash of Angostura bitters

Kaltbach Gruyère

Gruyère is a complex cheese. In the texture of Le Gruyère Aop of Emmi Kaltbach you can taste the characteristic crystals of cave cheese. At the Le Gruyère Aop of Emmi Kaltbach you can also taste the characteristic crystals of cave -dragged cheese in the texture. Kaltbach Le Gruyère Aop has been aged for 12 months in a cave in Switzerland; This gives the cheese a special taste. When you combine the Kaltbach Gruyère in food or drink, it is very important that the taste content of your drink or snack is slightly less intense than the taste of the cheese.

Sleeboots with date, walnuts and Gruyère

In my kitchen I went to work with the information I had learned during the workshop and the cheese that I was allowed to take with me. I also got the recipe of the cocktail that we made, the old fashioned with date. I wanted the sweet thing about the date cocktail to come back in my snack. Because the date is quite intense in taste (sweet) and the Kaltbach Gruyère on the other hand, I combine these flavors with neutral romaine lettuce and the full taste of walnut. You finish my snack with a little bit of balsamic vinegar. It is a delicious snack with a good taste balance and it also tastes very tasty with the old fashioned cocktail.
