After a long day at work, I love to quickly prepare a meal, pack a bag and head out for a quick run. Whether it is a warm summer evening or a crisp autumn day, a light meal that you can easily take with you is always nice. We live in Utrecht in an apartment without a garden or balcony, so if we want to eat outside, it has to be something easy. What we did last week, for example, is prepare this fresh salad with smoked salmon, avocado and cucumber. Packed our bags and hup, off to the lake! So we were able to enjoy a relaxing meal outdoors, perfect for any season.

Salad with avocado, smoked salmon and cucumber

This light and fresh salad with smoked salmon, avocado and cucumber is ready within 5 minutes. Perfect as a healthy lunch, quick dinner or side dish for a BBQ. Full of flavor, gluten-free and low-carb!

Ingredients

  • 200 grams of smoked salmon
  • 150 grams of corn salad
  • half a cucumber
  • 1 avocado
  • 10 sun-dried tomatoes
  • 2-3 tablespoons of olive oil
  • juice of half a lemon
  • 1 teaspoon dill
  • salt and pepper

Salad with avocado, smoked salmon and cucumber

    1. Cut or tear the smoked salmon into pieces. Cut the avocado into cubes, the sun -dried tomato into pieces and the cucumber into half slices.
    2. Put the lamb's lettuce in a large bowl, decorate with the salmon, avocado, tomatoes and cucumber.
    3. Make a dressing of the olive oil, lemon juice, dill and salt and pepper to taste.
