Do you remember those raw vegan pie a few weeks ago, with fresh peach and raspberry? I wrote with that that it was a recipe from the sister of a good friend of mine, who has recently started doing a lot with superfoods and sugar-free eating. When I visited their house again last week, she turned out to have come up with something delicious again: these raw lemon-coconut balls. When she told me what was in them, I thought again: gosh, how easy and healthy some super delicious things are.

Raw lemon-coconut balls

Deliciously fresh balls to accompany tea, a real summer snack. Surprise your guests or yourself with these delicious bites!

Ingredients

  • Delicious fresh little balls for tea, a real summer snack.
  • 50 grams of almond flour
  • 20 grams of almonds
  • 30 grams of coconut oil
  • 3 tablespoons honey (or agave syrup)
  • Lemon zest + juice of 1 lemon
  • pinch of salt

Raw lemon-coconut balls

    1. First grind the almonds in a food processor, together with the coconut grater.
    2. Then add the other ingredients: almond flour, coconut oil (not melted), honey, lemon juice and zest and the pinch of salt. Grind this well.
    3. Now turn small balls from the dough, about the size of a good cherry tomato. Then get them through some extra coconut grater and put them in the fridge.
    4. Cold the balls are the tastiest (I think), so it is best to serve them directly from the fridge. Enjoy it!

I still make myself very happy every now and then with a recipe like this. Where you used to make me happy with an extra large bon bon bloc, I am now a lot of happier with my homemade sugar -free chocolate bonbons. A few weeks ago I ate a small piece of Tony Chocolonely, because it was in a goodie box that I got after an event. So sweet! I thought my teeth would break down! It seems as if my taste has started blooming since I eat sugar -free, because I really like pure flavors now.

All test subjects for this recipe, critical girlfriends, family and friend, also liked it. The one thought it was a bit more acidic than the other, so try especially what you like best. You can put a little less lemon zest and juice through it, or an extra tablespoon of honey or agave syrup. I found the balls through the Citroen incredibly fresh and summery, really super tasty as a snack (grab 3 and you are full!) Or in the evening with a large mug of green tea. Really very successful and I am very curious about your opinion!
