A salad is a popular dish among those trying to lose some weight. I myself am not such a salad freak unless it is easy to make and filling at the same time. This Quinoa salad with mackerel, mushrooms and avocado is incredibly filling. Quinoa is 100% gluten-free and a great alternative to grain, also because quinoa is rich in protein. This superfood salad is gluten-free, rich in protein and healthy fats. In addition, it is a very filling salad because of all the fiber it contains.

Ingredients

  • 100 grams of quinoa
  • 100-200 grams of mushrooms
  • half an avocado
  • 100 grams of smoked mackerel
  • 100 grams canned lentils (precooked)
  • 75 grams of lettuce (melange)
  • pinch of garlic powder
  • pinch of salt

Quinoa salad with mackerel, mushrooms and avocado

    1. Rinse the quinoa well and kook With about 150ml of water in 8 minutes.
    2. In a frying pan, fry the champingons with some garlic and salt, nicely brown, even in about 7-8 minutes.
    3. Cut half an avocado into cubes.
    4. In the meantime, place the lettuce on a plate. Also rinse the lentils until they no longer foam. Then divide the pieces of mackerel, the avocado and the lentils over the lettuce. When the quinoa is cooked, scoop this over the rest of the plate with a spoon.
    5. Finally divide the mushrooms over the quinoa and your healthy salad is ready!
