Who doesn't know it, the pumpkin spice latte from Starbucks? It's so good, it's such a shame it's only available for a few months a year! That is why I would like to share this recipe with you. This way you can enjoy a delicious indulgent moment all year round. I can also imagine that you are a little hesitant to try this drink, because pumpkin and coffee is not a logical combination, but trust me... a pampering moment is exactly what a pumpkin spice latte is!

Make yourself the famous Pumpkin Spice Latte recipe from Starbucks. My recipe is also sugar-free and vegan, which will be (sort of) a responsible treat!

Ingredients

  • 250 ml vegetable milk e.g. almond milk or soy milk
  • 1 large tablespoon of pumpkin puree homemade or from the supermarket
  • 1 teaspoon cookie spice or homemade pumpkin spice mix
  • 2 dates
  • 1 teaspoon vanilla extract
  • 1 cup of espresso

    How do you make your own pumpkin spice latte?

    1. Roast pumpkin chunks at 200 degrees for about 20-30 minutes. You can use a bottle of pumpkin and freeze the pieces left over for another time. Or make pumpkin soup out of it. Using a hand blender, puree the pumpkin along with the dates (without seeds!) and milk in a blender.
    2. Put this mixture in a saucepan and heat over low heat. Let just near boiling point and remove the pan from the heat.
    3. Mix in the cookie spices (or spice mix) and the espresso and vanilla extract. You can add another dollop of coconut cream on top (top thick layer in can of coconut milk, whisk for a moment), but the pumpkin spice latte is super delicious without it anyway!

With this pumpkin spice latte recipe you replace the two tablespoons of sugar that normally contains, with two Medjoul dates. Super easy and of course a lot healthier! So I call it sugar -free, because you only naturally use sugars present in this pumpkin spice latte recipe. The whole may seem a bit complicated, but once you've made the recipe, you make your own pumpkin Spice Latte in no time. Especially if you still have a supply of pumpkin in the freezer ...

Make Pumpkin Spice Latte

The tastiest is of course to make your Pumpkin Spice Latte yourself. By this I mean that you cut, roast and puree the pumpkin yourself. Use a good hand blender for the latter. You can also make the spice mixture yourself. You only have to do this once in a while (if you make a lot of Latte’s, which I can imagine). But, of course, you can easily get a tasty cookie spice mixture at the supermarket. What you will also make your Pumpkin Spice Latte with, he will undoubtedly taste like more!
