Completely crazy about it: peanut butter. You can barely see me with a spoon the jar, although I know enough people for whom that is not even too crazy. But to always put peanut butter on a sandwich or rice cake is a bit much, so I wanted to make a nice recipe that you can enjoy in between meals. These healthy peanut butter cups are perfect for that. Not too big, but just right for those cravings, with coffee or your work dip at 3 o'clock.

Ingredients

  • 100 grams dark chocolate (e.g. 92% cacao)
  • 2 tablespoons coconut oil
  • about 2 tablespoons sugar-free peanut butter
  • handful of fresh nuts, e.g. pecans or cashews

Peanut butter cups

    1. Chop the pecans into pieces.
    2. Melt au-bain-marie the chocolate and coconut oil together in a small bowl. If the chocolate is completely melted, turn off the heat, but make sure the chocolate does not harm.
    3. Add the chopped pecans to the peanut butter and mix.
    4. Put the muffin shapes in a muffin baking tin for extra strength. Now scoop a little bit of melted chocolate into the muffin shapes, so that the bottom is well covered. Do not use too much. Put the molds in the freezer and wait 15 minutes.
    5. Then scoop some peanut butter in each shape and spread it over the chocolate floor. Put in the freezer again for 15 minutes.
    6. Then divide the melted chocolate over the layer of peanut butter into the molds. Let it set for about 2-3 hours. You can then pack them individually. Get them out of the freezer about 10 minutes before you want them to eat. Enjoy!

Maybe it is better to double the recipe right away, because here they all disappeared from the freezer in no time. They went over the counter like hot sandwiches and they are actually perfect treats to have your freezer as standard. I think the combi of chocolate and peanut butter fits perfectly with a cup of coffee. Am I very strange then? In any case, they will be good at visitors, because who doesn't love peanut butter now ;-).

You can also vary nicely with the chopped nuts you use. For example, you can also alternate with chopped peanuts; Make sure you use unsalted peanuts. Or choose walnuts or cashews. All tastes just a little different. I hope you will enjoy it as much as we do!
