Healthy pancakes with chickpea flour. Not everyone is familiar with chickpeas and certainly not with chickpea flour. This is not surprising, since it is not used that much in Dutch cuisine. Too bad, because chickpeas are very healthy and easy to use in many recipes.

Pancakes with chickpea flour

These pancakes with chickpea flour are a savory and healthy option, rich in protein and fiber. Chickpea flour is mixed with water and salt for the pancake batter, while the filling consists of crispy fried chicken breast, spinach, olives, avocado, pine nuts, and spices such as cumin seeds and garlic. The pancakes are pan-fried until golden brown and then served on a bed of fresh spinach with avocado. A nutritious meal that is ready within 30 minutes!

Ingredients

  • 110 grams of chickpea flour
  • 200 ml water
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking soda
  • Fresh spinach
  • 100 grams chicken breast
  • 15 garlic olives
  • 10 grams of pine nuts
  • half an avocado
  • 2 garlic cloves
  • 1 shallot
  • 1 teaspoon cumin seed

How to make pancakes with chickpea flour?

    1. Put the chickpea flour, baking soda and the normal salt in a mixing bowl. Mix the water little by little and mix it into a smooth mix.
    2. Cut the chicken fillet into small cubes and finely chop the shallot. Squeeze the garlic cloves in a pan with some olive oil and add the shallot and the chicken fillet. Season with some pepper, paprika powder and salt. Bake the chicken fillet lightly until golden brown.
    3. If the chicken fillet is cooked, take half out of the pan and put on a separate plate. Half of the chicken is now in the pan.
    4. With a tablespoon, pour some of the chickpeas mixture into the pan (medium heat). Press half olives in the pancake, along with half of pine nuts and half a teaspoon of cumin seeds. After about 3 minutes, turn the pancake if it is nice and golden brown.
    5. When the pancake is turned over you can also put some of the spinach on the pancake. Meanwhile, cut the avocado into small cubes and make a bed of spinach on a plate, the other pieces of chicken and avocado.
    6. If the pancake is nicely golden brown on both sides (3 minutes per side), scoop it on the spinach bed and garnish with some spinach.
