This delicious dessert actually came into the world as an experiment, purely because one evening I suddenly felt like having dessert. This was to contain only natural sugars, of course, so I quickly dove into the pantry to see what we had in the house. And I found coconut milk! You can make a nice dessert with that; but what can you add to it so that little natural sugar is needed? Figs, because they are so sweet by themselves and some cinnamon because I love this combination with the coconut.

Coconut pudding with figs and cinnamon

This sugar-free pudding is really super delicious, also vegan and definitely a healthy alternative to serve as a dessert.

Ingredients

  • 400 ml coconut milk
  • 20 grams of coconut rind
  • 2 teaspoons of cinnamon
  • 10 ml agave syrup
  • 3 dried figs, chopped into pieces
  • 2 g agar agar (or 4 g gelatin)

Coconut pudding with figs and cinnamon

    1. Put the coconut milk in a pan, along with the coconut grater, cinnamon and the figs.
    2. Puree with a hand blender This mixture to a smooth whole, so that there are no more pieces of figs in the pudding.
    3. Then add the agar agar and bring it carefully to the kook. Kook Gently for a minute and then add the agave syrup and remove from the heat.
    4. Divide the mixture into 3-4 trays, depending on the size and how much you put in each bowl. 
    5. Put in the fridge and let it set in about 1.5-2 hours.
    6. Before serving, put the dishes in hot water so that the pudding releases more easily. Enjoy your meal!

In the end I put in 10ml agave syrup to make it slightly sweeter, but not even many natural sugars were needed to make this pudding taste great. You can of course replace the agave syrup with maple syrup or honey, if you want. If you do not have agar-agar at home or do you not eat vegan, then you can also replace the agar-agar with regular gelatin. Then use the double quantity.

This sugar -free pudding is really super tasty, also vegan and definitely a healthy alternative to serve as a dessert. Or to snack away on the couch, as I did. Hope you like it just as much!
