Sticky rice with mango and banana is a common dessert in Asia. I love this kind of dessert; sweet, but not too sweet, and with some nice fruit. In traditional "sticky rice" quite a bit of sugar is used; in this recipe I give a substitute for that by using dates. Basmati rice also lends itself perfectly to this recipe; you really don't need to buy special sushi rice for it.

Ingredients

  • 300 ml coconut milk
  • 65 grams of dates
  • pinch of salt
  • 1 teaspoon cornstarch or potato fiber
  • 100 grams basmati rice
  • half a lime
  • 2 bananas
  • 1 mango
  • small piece of chocolate to grate

Sticky rice with mango and banana

    1. Leave the rice in water for an hour. Then drain it and steam the rice.
    2. Meanwhile, make the coconut sauce. Put the coconut milk with the pitted dates, a little bit of lime juice and pinch of salt in the food processor and mix until it is a smooth mixture.
    3. Keep 1/3 of the coconut milk aside. Pour the rest (2/3) in the rice when it is finished steaming. The rice will slowly absorb some moisture from the coconut milk.
    4. Put the leftover coconut milk in a pan with a teaspoon of cornflour and some lime juice and bring to the kook. Remove from the heat and stir, it is now becoming a somewhat thicker sauce.
    5. Cut the bananas in slices lengthwise, do the same with the mango.
    6. Carefully fry the banana with some oil in the pan.
    7. Spoon the glazing rice on a plate. Pour some of the coconut sauce over it. Divide the mango next to it and do the same with the fried banana. Grate some chocolate over the glutinous rice and Enjoy!
