After eating unhealthy food, I don't feel good at all. I get a headache, get tired, drowsy, lethargic, cranky and after one cookie I always feel like a cow. I think this is very recognizable for many girls. Not only does this make me unhappy, but also my boyfriend, who then has to talk to me all evening about how I'm really not a cow, haha! These gluten-free oatmeal cookies are a much better alternative, because healthy cookies make us both happy!

Oatmeal cookies

An easy and quick recipe!

Course Dessert, snack
Kitchen Spanish
Servings For about 6 cookies

Preparation time

Preparation time 15 min
Time in oven 20 min
Total 35 min

Ingredients

  • 100 grams of gluten-free oatmeal (make sure you use gluten-free oatmeal with a seal of approval, if the cookies are to be truly gluten-free)
  • 60 ml of coconut oil
  • 2 tablespoons honey
  • 1 teaspoon of cinnamon
  • 50 grams of dark chocolate (above 70%)

How to make oatmeal cookies?

    1. Preheat the oven to 160 degrees
    2. Melt the coconut oil and honey in a pan and add the oatmeal and cinnamon
    3. Make with a spoonful of cookies on your baking sheet (yes it is very grainy). Bake the cookies in the oven for 20 minutes
    4. Let them cool down, because they only get hard
    5. Melt the chocolate 'au bain-marie' and pour this over the cooled cookies. Let the chocolate harden and… .. Enjoy!

And nice that they are! Wow! Really very good. And what I always find very important is that they are ready quickly, contain few ingredients and are of course healthy. So these cookies are actually perfect. So I would say: hop into the kitchen, bake and then you also become such a cookie monster.

I really love oatmeal, it is affordable, easy to use and gluten -free (if indicated).
