Indispensable in my kitchen: a supply of healthy granola. I eat it almost every morning, with some (vegetable) yogurt and fresh fruit. Many recipes for granola are quite elaborate, with lots of ingredients, but I wanted to make a basic recipe. Also without oat flakes, but just with "regular" oatmeal. Nice and cheap and super simple!

Granola with speculoos

Healthy granola with speculoos is a delicious and easy breakfast that is perfect for the colder months. The granola is made from gluten-free oatmeal, nuts, flaxseed, coconut oil, honey and speculoos spices, and baked in the oven until golden brown. This homemade granola contains less sugar than most store-bought varieties and can easily be stored in an airtight jar for a healthy breakfast or snack.

Ingredients

  • 220 grams of oatmeal (gluten-free)
  • 100 grams of unsalted nuts (e.g. pecans and walnuts)
  • 30 grams of coconut oil
  • 40 grams of honey
  • 10 grams of speculaaskruiden
  • 15 grams of linseed
  • 3 tablespoons water

How to make granola with speculoos?

    1. Coarsely chop the nuts and mix with the oatmeal, gingerbread spices and linseed. Melt the coconut oil and add this, together with honey and water. Mix this well.
    2. Cover a baking sheet with baking paper and spread the granola on it.
    3. Now bake granola for about 20 minutes at 150 degrees. Check if it is already nicely brown, bake a little longer.
    4. Allow to cool well and store in an airtight pot.
