The season of pumpkin. That rhymes. Besides the fact that it's fun that this rhymes, I'm also very happy about this season, because since last year I really discovered pumpkin. Of course, I knew pumpkin was around for a lot longer, but I wasn't that crazy about it and I honestly didn't really know what you could do with it. And you can do an awful lot with it, it turns out, but I had to find that out at the time. This time I made gluten-free pumpkin pancakes, really delicious to start your day!

Gluten-free pumpkin pancakes

Pumpkin, you can do an awful lot with it. Incorporate it into a pancake for a good start to the day.

Ingredients

  • 100 grams of gluten-free flour
  • 85 grams of pumpkin (puree)
  • 100ml vegetable milk
  • 1 egg
  • 1 teaspoon of cinnamon
  • 1/4 teaspoon ground cloves
  • pinch of cardamom
  • pinch of salt

Gluten-free pumpkin pancakes

    1. You need pumpkin puree for this recipe. The easiest way is to cut half a pumpkin into a piece and cook, puree this and then store it in the fridge. You can bake in all directions with pumpkin puree, such as a pumpkin cake or add it to your oatmeal.
    2. Mix the vegetable milk, the gluten -free flour, egg, cinnamon, clove, cardamom and salt into a smooth batter.
    3. Add the pumpkin puree and mix.
    4. Heat some (coconut) oil in the pan, pour some batter into the pan and fry the pancakes per side for a few minutes.

For the batter I use gluten -free self -rising flour, but you can also use almond flour, buckwheat flour or rice flour. The batter is ready! Nice tip: buy a whole pumpkin and use half to roast for, for example, dinner. You can cut the other half into cubes, cook and make puree of it, for example. You can use pumpkin puree in many recipes or, for example, put through your oatmeal. Tasty and healthy!

You don't have to sweeten the pancakes; The pumpkin makes the dough a bit sweet. Of course it is nice to eventually serve the pancakes with some (fresh) fruit, for example blueberries. With apple sauce is also very tasty
