Eating healthy is also really delicious and it doesn't have to be difficult at all! In this blog, I'll tell you how to make a gluten-free mug cake, using only healthy ingredients that you probably already have around the house. The nice thing is that with this basic mugcake recipe you can vary the toppings so you have a different flavor combination every time. Your base is one ripe banana, one medium egg and two handfuls of gluten-free oatmeal.

Ingredients

  • 1 ripe banana
  • 1 medium egg
  • 2 handfuls of gluten-free oatmeal (about 35 grams)
  • 1 level tablespoon of flaxseed
  • 1 level tablespoon of coconut flakes
  • A few cacao nibs
  • Small handful of raisins

Gluten-free mug cake

    How do you make a gluten-free mug cake?

    1. Take a large mug or soup bowl that is microwave safe (not glazed porcelain, for example). Slice the banana and mash it in the mug/bowl fine. Whisk the egg into this.
    2. Then mix the oatmeal and the remaining ingredients well into this mixture.
    3. Put the mugcake in the microwave at 900watt for 2 minutes. Or bake the mugcake in a preheated oven for about 12 minutes at 200 degrees.
    4. Try 2 minutes first and then see if the cake is dry "baked" and if you can pull it loose from the mug, then your mugcake is ready. Be careful because the mug can be hot!
    5. If it is still too moist put it back in the microwave for another minute.
    6. Enjoy!

You can eat a mosquito cake hot for breakfast, but you can also take a mosquito cake to work or school and cold food for lunch. Bake the mugcake in the morning and let it cool down for a while (if you change clothes in between, for example). Then cut the cake into pieces and take with you in a container.

You can also prepare the mug cake in the oven, if you prefer not to use a microwave due to harmful effects. I would like to give you both the options in the recipe, so that you can make a choice yourself.
