Ingredients

  • 2 eggs pp
  • fresh thyme
  • goat cheese
  • 1/2 bell bell pepper
  • 1 avocado
  • handful of rocket
  • salt & pepper
  • olive oil

Healthy egg wrap

    1. Break the eggs above a bowl and beat them together with a whisk or fork.
    2. Season the egg mixture with salt & pepper and some fresh thyme (you can also use dried if you don't have fresh thyme).
    3. Wash the bell pepper and avocado and cut it into thin strips. You also cut goat cheese into strips.
    4. Bake 2 omelettes of the eggs.
    5. The omelette forms the wrap: fill it with some pepper, avocado and goat cheese
    6. Top with some arugola
