The perfect stuffed sweet potato

These stuffed sweet potatoes with bacon are delicious and easy to make. The sweet potatoes are roasted in the oven until soft, then stuffed with melted Parmesan cheese, crème fraîche, fried bacon and spring onion. The result is a flavorful combination of sweet and savory, perfect as a side dish. Simple, but guaranteed to be a hit at the table!

  • Oven at 180 °C

Ingredients

  • 2 sweet potatoes
  • Handful of grated Parmesan cheese
  • 2 tbsp crime fraîche
  • 125 gr smoked bacon cubes
  • 2 spring onions

How to make the stuffed sweet potatoes?

    1. Preheat the oven to 180 ° C. Wash the sweet potatoes, pierce them here and there with a fork and pack them in aluminum foil. Place the potatoes on the rack in the oven and let them stand in it for about 50 minutes. Occasionally turning, and piercing it to feel if they are already cooked.
    2. In the meantime, bake the bacon in the frying pan, cut the spring onion into rings and grate the cheese.
    3. When the potatoes are cooked, cut them in half, sprinkle the halves with cheese and put them in the oven for another 5 minutes, so that the cheese starts to melt nicely.
    4. Finally, spread some crème fraîche on it, and finish it with some fried bacon and spring onion. Enjoy your meal!
