The frittata originated in Italy. It is made from all the vegetables and pasta left over from the day before. Thus, you can also use other leftovers left in the fridge for a frittata.

Ingredients

  • 100 grams of sliced kale
  • 1 tbsp olive oil
  • 1 chopped onion
  • 2 cloves of garlic
  • 6 -8 large eggs
  • 2-3 tbsp lactose-free milk
  • 1 tbsp water
  • salt and pepper

Kale frittata

    1. Fry the onion in a (deep) pan with some olive oil and add the garlic and kale. Add a tablespoon of water. Spoon well and let the kale shrink.
    2. Mix the eggs and milk in a bowl and add some pepper and possibly salt.
    3. Add the egg mixture to the pan and fry the frittata in about 15-20 minutes-on a low heat. Turn halfway (use a lid) and at least wait until you know for sure that the egg has been solidified.

Serve with a nice salad and a piece of fish or chicken and enjoy!
