This club sandwich with omelet, cucumber and tomato is a gluten-free and quick lunch option. Start by toasting the bread, fry an omelet and slice the tomato. Top the sandwich with the omelet, cucumber, tomato and lettuce of your choice. For some extra variety, add mushrooms, spring onion or ham. Stack the slices into a tasty sandwich tower and enjoy a nutritious lunch! Perfect for 1 person or more, depending on the number of sandwiches

Ingredients

  • 4 slices of gluten-free bread
  • 2 eggs
  • 14 slices of cucumber
  • 1 tomato
  • lettuce of your choice

How to make a club sandwich with omelet, cucumber and tomato?

    1. Club time! If necessary, cut the crusts off the bread and roast the sandwiches in the toaster.
    2. Beat the eggs in a small bowl and bake an omelet. Cut the tomatoes into slices.
    3. Cut the sandwiches diagonally through the middle and spread with omelet, kokommer, tomato and lettuce of your choice. Possibly vary with fried mushrooms, a spring outing or a slice of ham/cheese. This makes it almost a supper. 
    4. Repeat the above until you have a beautiful sandwich tower. And have lunch! Easy to prepare for 1.2 or more people.
