Mug cake. Funny word for an even funnier recipe, because you literally prepare this little cake for one person in a mug. I made a mug cake with raspberries before. Now I thought it was time for a chocolate version and so finally a new recipe: gluten-free chocolate mug cake.

Whether you eat it for breakfast, lunch or snack, it doesn't matter at all. You can also eat this mug cake on a weekday. It takes no time at all to prepare.

Ingredients

  • 1 1/2 tablespoons coconut flour (or almond flour)
  • 1/2 large banana
  • 1 egg
  • 2 medjoul dates (pitted)
  • 1 tablespoon cocoa powder
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon tartaric acid baking powder
  • handful of fresh/dried fruit, such as strawberries or blueberries
  • teaspoon of coconut rind or coconut chips

Chocolate mug cake

    1. Put the coconut flour, banana, the egg, cocoa, baking powder, vanilla extract and the pitted dates in the food processor. Leave in about a minute until an even mixture mixel.
    2. Spoon this mixture into a mug and place it in the microwave or oven. For microwave: 2 minutes at 900W. For oven: 20 minutes at 180 degrees.
    3. Garnish with fresh fruit and coconut grater. Enjoy your meal!
