Carrot cake, carrot cake ... all synonyms for a darn tasty treat. On my birthday, one of my best friends not only made me a sushi cake (awesome!), but also a load of carrot cake balls. I really love these kinds of balls; I have quite a few recipes myself for peanut butter balls, brownie balls, bliss balls. These kinds of balls are often easy to make as well as take away and it's a convenient size for a small snack.

Equipment

  • Food processor
  • Coconut rind
  • Cutting board

Ingredients

  • 150 grams of carrot
  • 20 grams of oatmeal (possibly gluten-free)
  • 60 grams of dates
  • 50 grams of mixed nuts
  • 1 teaspoon vanilla extract
  • 1 teaspoon specula spice
  • 1/2 teaspoon cinnamon
  • pinch of ginger
  • 2 tablespoons coconut rind

    How to make carrot cake balls?

    Scrub the carrots clean and cut off the butt. Then put them in a food processor and chop finely. Add the pitted dates and the nuts and grind again.

    Then add the oatmeal, vanilla extract, spice, cinnamon and ginger mix it in.

    Spoon the coconut rind onto a plate.

    Make small balls of the dough and roll them through the coconut rind. Store airtight in the refrigerator or freeze the balls.

When my girlfriend told how much carrot was in it, I was quite surprised! I believe she made it according to a different recipe, but I decided to experiment with the ingredients myself. Of course there is carrot in it, date to sweeten and nuts for a bite and texture. In addition, oatmeal for fiber and structure and nice herbs to season the Carrot cake balls.

I thought the recipe was such a success that I decided to treat my colleagues to these carrot cake balls the following week. Everyone loved them! You can consider adding a little more herbs than is now in the recipe, to give them a little more taste. My advice is to first taste the "dough" and then add herbs to taste. I hope you like them as well as me!
