Yes, another stunner for lunch! This is by far my new favorite for a nice relaxing lunch, preferably on Saturday afternoon in the sunshine. I usually get some extra vegetables for it, but you can also make this sandwich with grilled vegetables and hummus if you have leftovers. You get some extra vitamins and minerals and the fiber keeps you full for a long time.

Sandwich with grilled vegetables and hummus is a quick and tasty lunch option, ready in just 10 minutes. Grilled eggplant, zucchini and bell bell pepper are combined with hummus on a warm pita or Italian bun. The grilled vegetables add a full flavor, and a pinch of rosemary finishes it off. Perfect for a weekend lunch full of flavor and convenience.

Ingredients

  • 1 eggplant
  • 1 zucchini
  • 1 red bell bell pepper
  • hummus
  • 2-4 (gluten-free) shoarma rolls (pita) or possibly Italian roll

How do you make a sandwich with grilled vegetables and hummus?

    1. Wash the vegetables and cut them into slices. Grill them in the pan, oven or with a contact grill.
    2. Cut the pita sandwiches (first open them in the toaster) or Italian ball, spread them with hummus and divide the grilled vegetables over it. Possibly finish with some dried rosemary. Enjoy your meal!
