Hummus. Humus. Houmous. Hummus. No idea what the only real correct way of spelling it is now, but I love it. Hummus, in other words. Delicious! At work I almost always have a container in the fridge, so I can prepare a nice lunch with it. Today I am going to show you a super simple lunch recipe: bread with hummus and avocado. You only need 3 things for it (ok, 4 if you count the pepper) and you are ready in no time. Perfect for work!

Sandwich with avocado and hummus

If you eat this lunch at the office, you can simply take the avocado with you whole. If you leave the stone in the unused half and wrap the avocado well (e.g. with cling film) you can enjoy it the day after as well :-).

Ingredients

  • 1 (gluten-free) roll (I used a spelt roll myself, but of course you can use another roll or sandwich)
  • half an avocado
  • 2 tablespoons hummus (e.g. homemade beet hummus)
  • pinch of pepper

Sandwich with avocado and hummus

    1. Cut your sandwich in half and spread the bottom with hummus.
    2. Cut the avocado in the middle, leave the pit in half that you do not use. Cut the flesh with a knife horizontally a number of times and then scoop out the flesh with a spoon. Place the avocadoplakjes on the hummus.
    3. Tasty with another pinch of pepper over it. Eetse!
