Cauliflower salad with asparagus and pomegranate

Ingredients

  • 250 grams of green asparagus
  • 1/2 cauliflower
  • 3 spring onions
  • 2 red peppers
  • 1 pomegranate
  • 100 grams of soft goat cheese (Chevre)
  • juice of 1/2 lemon
  • 3 tablespoons of olive oil
  • pepper and salt
  • 1 teaspoon dill
  • 1 teaspoon thyme
  • handful of plain almonds

Cauliflower salad with asparagus and pomegranate

    1. Grill the asparagus nicely cooked in 5 minutes. Cut them into pieces of 3-4 centimeters.
    2. Chop the cauliflower into smaller pieces and grate them in the food processor or with a hand grater.
    3. Cut the spring onion into thin rings, the peppers into cubes and spoon the pomegranate seeds from the pomegranate (watch out for stains ;-)).
    4. Mix the grated cauliflower with the grilled asparagus, spring onion, bell pepper and pomegranate. Crumble the soft goat cheese over this.
    5. Make a dressing of lemon juice, olive oil, pepper, salt, thyme and dill and spoon this dressing over the salad. Mix well with the salad. Garnish with almonds. Enjoy your meal!
