I am so happy with this recipe. For ages I wanted to come up with a recipe for shortbread cookies, with a dough that you could easily cut out shapes so they would also be fun to bake with kids. After all, that's how my passion for baking and cooking started; baking shortbread cookies from a cookbook with mom when I was a little girl. These gluten-free and sugar-free buckwheat flour cookies are the healthy variety; they are sugar-free yet deliciously sweet and you make them in the cutest shapes.

Buckwheat flour cookies

You only need a few ingredients to bake these cookies. Truly ideal!

Ingredients

  • 200 grams of buckwheat flour
  • 75 grams of coconut oil
  • 110 grams of dates
  • 1 teaspoon of tartar baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • 50 ml vegetable milk (e.g. sugar-free almond milk)
  • pinch of salt

How to make buckwheat flour cookies?

    1. Preheat the oven to 170 degrees
    2. Melt the coconut oil.
    3. Put the buckwheat flour together with coconut oil, (peat) dates, tartarpone powder, baking soda, vanilla extract, vegetable milk and salt in a food processor. Let it run until you have an even dough.
    4. Knead this well with your hands until you have a ball. Is the dough too wet? Add something a little buckwheat flour. Is it just too dry? Then add a small dash of almond milk.
    5. Cover a baking sheet with baking paper. Fold the dough to about 1 thick and stick the cookies out one by one. Place it on the baking sheet and bake for about 15-20 minutes until golden brown. Let them cool down for a while, then they harden.

This is the ultimate cookie dough to eat. Cooking dough is one of my guilty pleasures, even if there is an egg in it! That is of course not so good for you and that is why this dough is so nice: there is no egg in it. Incidentally, no butter and that also makes the cookies vegan. So they are really suitable for almost everyone! Oh and two more benefits: you only need a few ingredients and they are ready in no time.

And great for a few days, if you pack them airtight. They were here in a cookie jar, but unfortunately did not last for more than 3 days. They are just too tasty! According to the test panel you would not say that there is no sugar in it at all and I think they are even better for kids. Then they don't even realize that they are eating healthier ;-).
