Watermelon Spritz with Mint and Lime

Fresh, fruity and festive: this watermelon spritz is the perfect summer cocktail for a warm day. With fresh watermelon, sparkling water and a splash of prosecco you serve something special without the fuss.

  • Large jug or pitcher
  • Highball glasses
  • Citrus juicer
  • Spoon or stirrer

Ingredients

  • 600 g watermelon (rind removed, in pieces)
  • 2 limes (juiced)
  • 1 handful fresh mint leaves
  • 500 ml prosecco (or sparkling water for alcohol-free)
  • Ice cubes
  • Lime slices and extra mint for garnish

How do you make a watermelon spritz with mint and lime?

    1. Cut the watermelon into pieces and remove the seeds. Put the pieces in a blender and blend until smooth.
    2. Strain the watermelon juice through a fine-mesh sieve into a large pitcher so you end up with a clear, smooth juice without fibres.
    3. Squeeze the limes and add the juice to the pitcher with the watermelon juice. Stir well.
    4. Add a generous handful of fresh mint leaves to the pitcher and let the mixture infuse for 10 minutes for more flavour.
    5. Fill each highball glass halfway with ice cubes.
    6. Pour the watermelon-lime mixture about one third into each glass.
    7. Top up the glass with prosecco (or sparkling water for an alcohol-free version). Stir gently so the bubbles are preserved.
    8. Garnish each glass with a lime wheel, a sprig of fresh mint and optionally a small piece of watermelon on the rim. Serve immediately.
