How to make a tropical Hugo Spritz with passion fruit and mint?

Cut the passion fruits in half and scoop out the pulp. Strain the juice into a bowl so you only have the clear liquid. You will need about 60 ml in total.
Fill each glass generously with ice cubes. Use large glasses with enough room so all the flavors can shine.
Add 30 ml elderflower lemonade per glass, followed by 10 ml passion fruit juice.
Carefully pour 90 ml prosecco into each glass. Do this slowly along the side so the bubbles are preserved.
Top up with a splash of sparkling water (about 30 ml per glass) for extra freshness.
Clap a few fresh mint leaves between your palms to release their aroma and place them on top of each glass.
Garnish each glass with a lime wheel and serve immediately. Cheers!
