Roasted tomatoes are the secret weapon in this recipe. Popping the tomatoes in the oven makes them sweet, concentrated and full of flavour. Top them with a ball of fresh burrata and you have a plate of pasta that looks instantly impressive, without you spending ages in the kitchen. Pasta with roasted tomatoes and burrata

Roasted tomatoes, creamy burrata and fresh basil on a bed of pasta. This dish is just right for a weeknight and for a dinner with friends.

Ingredients

  • 400 g spaghetti or linguine
  • 500 g cherry tomatoes
  • 4 garlic cloves, halved
  • 3 tbsp olive oil, plus extra for drizzling
  • 2 balls fresh burrata (each approx. 125 g)
  • 1 handful fresh basil
  • 1 tsp chili flakes (to taste)
  • Salt and freshly ground black pepper

How to make pasta with roasted tomatoes and burrata?

    1. Preheat the oven to 200°C (top and bottom heat).
    2. Halve the cherry tomatoes and place them cut-side up on a baking tray. Drizzle with 3 tablespoons of olive oil, season with salt, pepper and the halved garlic cloves. Roast them for 25 minutes until soft and lightly caramelized.
    3. Cook the pasta in plenty of salted water according to the package instructions. Reserve a cup of pasta water before draining.
    4. Take the tomatoes and garlic out of the oven. Crush the garlic cloves with a fork and mix them through the tomatoes on the tray.
    5. Return the drained pasta to the pan and add the roasted tomatoes with all their juices. Toss well and add a splash of pasta water for a silky sauce. Taste and season with salt and pepper.
    6. Divide the pasta among deep plates. Tear the burrata into pieces and arrange on top of the pasta. Scatter fresh basil leaves over it, add a pinch of chili flakes and a drizzle of good olive oil. Serve immediately.

This recipe proves you don't need complicated technique for a tasty plate of pasta. The oven does most of the work and you get the credit. Serve it with good bread to mop up the last juices—it's simply too good to leave behind.
