Oh how happy I am: these sugar-free and wheat-free rice flour bastogne cookies contain no refined sugars and are really so delicious! It was a big surprise that they tasted so good, because actually I just put some ingredients together. The taste was also a complete surprise.

Homemade bastogne cookies made from rice flour

These homemade rice flour Bastogne cookies are crunchy and surprisingly similar to the original Bastogne cookies. They are made from rice flour, coconut blossom sugar, oatmeal and figs for a delicious flavor combination. After baking, the cookies turn crunchy once they cool, perfect for a tasty gluten-free snack!

Ingredients

  • 1/2 cup rice flour (pf 60 grams)
  • 1 1/2 tablespoons coconut oil (about 40/50 grams, make the dough as liquid as you like)
  • 1/4 teaspoon tartar baking powder
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/3 cup coconut blossom sugar (or 32 grams)
  • 1/2 egg
  • 1/2 teaspoon vanilla extract
  • pinch of salt
  • 1/4 cup oatmeal (or 25 grams)
  • 1/4 cup dried figs (about 55 grams)

How to make your own bastogne cookies from rice flour?

    1. Heat oven for 160 degrees
    2. In a bowl, mix the rice flour with baking powder, baking soda, cinnamon and salt.
    3. In another bowl, mix the melted coconut oil, coconut blossom sugar, half egg and vanilla extract.
    4. Add the dry ingredients to the bowl with coconut oil and mix well. If this is an even dough, mix the figs (in pieces) and oatmeal. The mixture is quite liquid, not a panic.
    5. Make large cookies on the baking sheet with a tablespoon. Make sure there is sufficient distance, the mixture will still run a bit and otherwise the cookies will bake together.
    6. Fry the cookies about 10 on one side and then turn them around. Bake on the other side for another 5 minutes. When they come out of the oven they are a bit soft, but after they have cooled the cookies are nice and crispy!
