Last time I made a yummy banana cake and this time I made a cake that admittedly also has banana in it but it definitely doesn't dominate."

This raisin date cake that a fellow blogger made for us is perfect to make on the weekend. And then of course take a slice to work every day!

Ingredients

  • 250 grams of dates (pitted)
  • 2 small bananas or 1 large one
  • 100 grams of pecans
  • 200 grams of raisins
  • 200 grams of sultanas
  • 100 grams of spelt flour
  • 2 tsp baking spice
  • 2 tsp baking powder
  • 3 tbsp amaretto
  • 2 eggs (egg whites only)

Date raisin cake

    1. Preheat the oven to 180 degrees
    2. Cover a cake tin with baking paper.
    3. Put the dates in a small pan with 200 ml of boiling water and let it simmer for 5 minutes.
    4. Drain the liquid in a bowl (so catch it, you need it again) and put the dates in a blender. Add the bananas and 100 ml of the date fluid and blend until it is smooth.
    5. Mix the nuts, dried fruit, spelled, cookie spices and the baking powder in a bowl, add the date puree and the amaretto and stir until everything is mixed.
    6. Beat the egg whites to soft peaks and fold it through the cake mix. Put the mixture in your cake tin (it will be reasonably full) and then cover with the remaining pecans.
    7. Bake in about an hour (or until golden brown and crispy) and when a wooden skewer comes out clean. Allow to cool completely before cutting it.
