Spring has officially begun, YE-HES! Ok, I'm a winter person too though, because it's not that I hate the cold. In fact, winter has its charms, of course, and I thought last winter was great! But, like every year (and everyone, I think?) I really long for sunshine and sunlight in February. And what fits that better than this sunny breakfast of yogurt with grilled mango?

Yogurt with grilled mango

Deliciously fresh and fruity! Also easy to make in a vegan version.

Ingredients

  • 300 grams of yogurt
  • 1 mango
  • 5 tablespoons quinoa
  • 3 tablespoons honey
  • 1 teaspoon of cinnamon

Yogurt with grilled mango

    How to make yogurt with grilled mango?

    1. Peel the mango and remove the stone. Then slice the mango and grill it in the pan or with a contact grill. The mango only needs a few minutes.
    2. Meanwhile, grab a small pan. Put the quinoa in it and add the honey and cinnamon. Heat (it should absolutely not boil) and mix well and then put in the freezer.
    3. Scoop the yogurt into two containers, spread the mango on top and then take the quinoa out of the freezer. Divide this over the mango.
    4. Enjoy your meal!

Yogurt with mango is really a perfect combination. Mango just tastes sunny, it's such a nice piece of fruit! By the way, make sure you take a mature mango, unripe mangos are not sweet and not so tasty (I think). You can also always use pineapple if you can't find a mango or if you want to alternate a little.

I really like the quinoa crunch with this recipe. You can also prepare some extra quinoa and save it in the freezer if, for example, you will prepare this recipe a number of times. Or if you just feel like a snack. Do you want to make this recipe vegan? Replace the yogurt for vegetable (coconut) yogurt and the honey for agave syrup.
