So these wheat-free chocolate chip cookies without refined sugar are officially established here as delectable, healthy sinner cookies.

Wheat-free chocolate chip cookies

These cookies are easy to make. Very simply, you put all the ingredients together, knead for a minute, wait half an hour and stick out the cookies. Believe me, it couldn't be easier. All the while the end result is so unbelievably delicious!

Ingredients

  • 130 grams of spelt flour
  • 45 grams of rice flour
  • 50 grams of coconut blossom sugar
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 50 grams of coconut oil
  • 2 teaspoons vanilla extract
  • 2 tablespoons water
  • 70 grams of dark chocolate

Wheat-free chocolate chip cookies

    1. Put all dry ingredients in a bowl: spelled flour, rice flour, coconut blossom sugar, baking soda and baking powder.
    2. Chop the chocolate into pieces and keep it 10-15 grams apart. Put the rest at the flour mixture.
    3. Melt the coconut oil and add this to the flour, together with the vanilla extract and two tablespoons of water. Knead this dough into a smooth whole.
    4. Then put the dough in some aluminum foil and let it rest for half an hour in the fridge.
    5. Remove the dough from the refrigerator and knead again. Then roll the dough to about 1 to 2 cm thick and stick out cookies with a mold or the bottom of a glass.
    6. Place the cookies on a baking sheet covered with baking paper and gently press some pieces of dark chocolate on the top.
    7. Bake the chocolate chip cookies for 15-18 minutes at 190 degrees nicely golden brown. Let them cool well and keep them in an airtight pot or box. They are still blissful after 5-6 days!
