Often bowl you encounter the most delicious dishes while traveling in other countries. I am lucky that part of my in-laws are Brazilian and 2 years ago we went there to visit for 3 weeks. In the Netherlands I was already familiar with some Brazilian dishes, but once I arrived in Brazil it was like being bombarded with goodies.

Tapioca pancake with coconut sauce

Ingredients

  • 140 grams of tapioca flour
  • dash of water
  • 250ml coconut milk
  • 1 1/2 tablespoon arrowroot
  • 1 teaspoon agave syrup
  • 1 tablespoon coconut rind

How do you make a tapioca pancake with coconut sauce?

    1. In a bowl, always mix a little bit of water with the tapioca flour. Tapioca flour is a strange substance, a bit like cornflour. The tapioca flour must mix with water and be pushed into chunks again with a fork. If it stays liquid it is too wet, then add a little more flour.
    2. If you have nice chunks of flour, push all the flour through a fine sieve into a separate bowl. Set this bowl aside, this flour is ready for making the crepe.
    3. In a pan, put the coconut milk, coconut grater and agave syrup and bring to the kook. Let it cook for 5 minutes on a low heat.
    4. Then add the arrowroot, or cornflour, and remove from the heat. Stir occasionally until you notice that the sauce is getting thicker.
    5. Put a layer of tapioca flour of about 2 cm in the pan and press well. After a few minutes (2-3), turn the tapioca and let it bake on the other side.
    6. Place the tapioca pancake on a plate and scoop into a lot of the coconut sauce with a spoon. Then fold twice before the pancake gets cold, it then becomes fragile. Enjoy your meal
