Chia seeds have been trendy for quite some time. Not entirely without reason, as chia seeds contain many good properties that you can benefit from as an addition to your healthy diet! For example, the amount of chia seeds in this recipe contains a whopping 11 grams of dietary fiber per person, which is 1/3 of the recommended daily allowance! These seeds are also high in protein and omega-3 fatty acids, magnesium and calcium. For example, did you know that they contain 8 times more omega-3 fatty acids than salmon? And 6 times more calcium than milk? Not bad huh! And then you can also make this chia pudding with coconut and red fruit from them, as a healthy dessert!

Chia pudding with coconut and red fruit

The chia pudding with coconut and red fruit is a light, nutritious breakfast, rich in protein and omega-3 fatty acids. The mixture of coconut milk, Greek yogurt, chia seeds and red fruit is blended into a smooth pudding and must set for several hours in the refrigerator. Before serving, it is finished with fruit puree and coconut or chocolate frosting for a fresh, sugar-free start to the day.

Ingredients

  • 200 ml coconut milk
  • 200 grams of Greek yogurt (for a vegan version: omit the yogurt and take 400 ml of coconut milk)
  • 6 tablespoons of chia seeds
  • 250 grams of red fruit of your choice (in winter from the freezer)
  • Coconut zest and/or chocolate zest for decoration
  • Optional sweetener of your choice if you have a sweet tooth (rice syrup, honey, maple, agave...)

Chia pudding with coconut and red fruit

    1. Put the coconut milk, the yogurt, chia seeds and half of the fruit in the blender. Mix it until it has become a smooth mass. Tip: Taste a small snack of the masses to determine if you find it sweet enough. If not: add a sweetener of your choice. If you are with a hand blender Works: Let the fruit thaw for 15 minutes, and then puree it with the coconut milk and the chia seed.
    2. Divide the chia pudding over 2 lung drink glasses. Place the glasses in the fridge and let it set until the next morning. If you do not prepare it for breakfast but for dessert: the pudding is set after 3-4 hours.
    3. And then the next morning a few small steps before you can enjoy feasting: puree the other half of the fruit. Divide the fruit puree over the chia pudding.
    4. Decorate the pudding with some coconut shavings and/or chocolateasp.
