I mentioned earlier that snacks are often the most difficult thing for people eating sugar-free or wheat-free. At home it is easy to control what you eat and especially what you can eat, but outside the door it is much more difficult. And you can never have enough recipes for snacks, so I decided to recreate Iris' spelt bars. (Note: these bars are wheat free, NOT gluten free!)

Spelt bar with dates and nuts

You can never have enough good recipes for snacks. Try the spelt bars. They are ideal to take with you anywhere.

Ingredients

  • 160 grams of Medjoul dates, pitted
  • 4 tablespoons water
  • 1 egg
  • 65 grams whole wheat spelt flour
  • 80 grams of spelt flakes
  • 25 grams of oat flakes
  • 1/2 teaspoon (tartar) baking powder
  • 100 grams of chopped nuts (hazelnuts and almonds)

Spelt bar with dates and nuts

    1. Preheat the oven to 190 degrees
    2. Put the dates with the water in the food machine And grind fine. Then add the egg and mix well.
    3. In a separate (large) bowl, mix the dry ingredients: spelled flour, spelled flakes, oats flakes, baking powder and nuts. Add the date mixture to this.
    4. Cover a small baking tin or baking dish With baking paper and pour the mixture into it. Press well everywhere, especially on the edges.
    5. Bake nicely golden brown in about 15 minutes. Then let it cool well afterwards and then cut out strips (8-10 pieces)
    6. Packed separately in an airtight drum you can keep the bars for a week.

The recipe is fairly simple, but I still had to get spelled flakes into the house. Then it is a matter of using food processor, mix ingredients and push well in a baking tin. I have adjusted the recipe slightly, because with my dates I did not fully get out of weight. In addition, I used a little less nuts and spelled flakes because I found the mixture quite "dry" and with more dry ingredients it was afraid that the bar would not stick well. 

The spelled bars only have to be in the oven for 15 minutes, so that too is squeaked. I found the bars really surprisingly tasty! Although they are totally sugar -free, the dates make them sweet enough and they taste delicious. Also nice to take with you in your bag, because you pack them in some aluminum foil and then you can take them everywhere. So if you go this holiday to the beach, swimming pool or amusement park, then definitely take a few of these energy bars with you.
