When we still lived in Amsterdam and I still had no idea why it was that I had stomach aches so often, I used to make couscous regularly. Traditional couscous of course, with lots of vegetables and feta cheese. After I changed my diet, however, it was super difficult to find couscous that I could eat. So once I found gluten-free couscous, but again with sugar and milk. Unfortunately peanut butter. Some time ago I found this spelt couscous, which you can just find at the AH among the other spelt and rice products. Of course I immediately had to make a tasty recipe with it online and to keep it nice and healthy I serve this spelt couscous with grilled vegetables from the oven.

Spelt couscous with grilled vegetables

Easy to prepare and because your vegetables are grilled, it is also a very healthy meal. Any leftovers can be eaten for lunch the next day. Double the enjoyment.

Ingredients

  • 150 grams of couscous
  • 1 eggplant
  • 2 peppers
  • 50 grams of arugula
  • 80 grams of feta cheese
  • olive oil, salt and pepper
  • dried oregano and (fresh) basil
  • optional: 20 (black) olives and 10 sun-dried tomatoes

Spelt couscous with grilled vegetables

    1. Preheat the oven to 200 degrees - upper grill
    2. Cut the eggplant and peppers into large pieces and place them on a baking sheet with baking paper. Sprinkle with some olive oil, pepper and salt and place in the oven for 40 minutes (with upper grill).
    3. Prepare the couscous according to packaging. You can do this variant with spelled with boiling water, after which you remove the pan from the heat, put on the lid on it and occasionally pass through with a spoon.
    4. Spoon the grilled vegetables through the couscous and season with salt, pepper, oregano and basil. Now also add the olives and tomatoes.
    5. Spoon the couscous on a plate. Cut the feta into cubes and place it on top of the couscous. Put a lot of arugula next to it and your evening meal is ready! Enjoy your meal!
