Ingredients

  • 2 sweet potatoes
  • 1 red onion
  • Feta cheese
  • 100 grams of leafy spinach
  • 4 eggs
  • fresh parsley
  • salt & pepper

Spanish sweet potato tortilla

    1. Scrub the sweet potato well and cut into thin slices. You can do this with a potato peeler or cheese slicer but you can also do with a knife.
    2. Also cut the onion into thin rings.  Put some oil in a frying pan and fry the onion and sweet potato slices with salt and pepper in 5 minutes until golden brown.
    3. Meanwhile, beat the eggs in a bowl, add the finely chopped parsley and crumble the feta over it.
    4. Then pour the egg mixture over the sweet potato and onion and divide the spinach over the omelet.
    5. Lid on the pan, heat low and let it cook in ten minutes.
